Ms. Eriko Osawa purchases substandard vegetables and fruits, produce that would otherwise be thrown away, and blends them whole to create ingredients for gelato. She launched this initiative after falling ill and discovering the immense potential of nature and agricultural produce, driven by a desire to share its appeal with others. Ms. Osawa envisions introducing the world to the wonderful food ingredients and culture of Japan that she has encountered through her interactions with producers nationwide.
