子どもの自主性を高める保育園を運営している白水純平さん。園児たちは、食育の一環として、自分たちの食事づくりをする中で包丁の使い方を学び、園内の畑ではお米や野菜などを栽培。また、調理後の野菜くずや食べ残しはたい肥にし、“食の循環”を丸ごと体験しています。子どもたち自らが好奇心を持って取り組み、学べる場をつくることで、地域のコミュニティと経済の活性化につなげていきたい、と語る白水さんの思い描く未来とは？
Mr. Junpei Shiramizu runs a daycare center that fosters children’s independence. As part of their food education, the children learn how to use knives while preparing their own meals and grow rice and vegetables in the center’s garden. They also experience the food cycle firsthand by turning vegetable scraps and leftovers into compost. Mr. Shiramizu believes that creating an environment that stimulates children’s curiosity and encourages learning will lead to the revitalization of the local community and economy.
